I have been cooking low carb for more than twenty years. I am hypoglycemic and my husband is an insulin dependent diabetic, so this is more than a diet. It's a way of life now. I quickly found that it was very difficult to stay on a diet that excluded all the foods I had grown up with and loved.
So I set about the task of adapting my old tried-and-true comfort foods to the low carb diet we now have to follow. These recipes are the ones I cook day in and day out for myself and my family.
